Shrimp Creole

 

Melt 3 T. butter. Add 1/4 cup chopped onion. Cover and cook two minutes. 
Add 2 cans tomatoes, 1 cup chopped green pepper, and 1/4 cup chili sauce.
Cook till thick. Can thicken if desired.

Just before ready to serve, add 3 lbs. cooked shrimp, 1 can ripe olives, and 1/2 cup cooking sherry.

Serve this over rice.
