Hawaiian Chicken

 

Norvell Style

Defrost    1 pkg. chicken breasts +  pkg. chicken thighs
                or 1 large chicken
Mix together:
                1/4 cup flour
                1 tsp. salt
                1/2 tsp. celery salt
                1/4 tsp. garlic salt
                1/4 tsp. nutmeg

Dust the chicken pieces with the flour mixture and brown well in 4 Tbsp. butter or oil. 

Combine:
                1 cup pineapple juice, from No. 2 can sliced pineapple
                1.2 cup soy sauce
                2 Tbsp. sugar
                1 Tbsp. flour
Place pieces of browned chicken in shallow casserole or baking dish or roaster,  Pour pineapple-soy sauce over them.  Cover, and bake in moderate (350°) oven for about an hour or until chicken is tender.  If sauce does not cover chicken, baste chicken several times while baking,  The left-over flour mixture can be added to sauce to make it thicker.  Also more pineapple juice or a little water may be added  to make more gravy (so you don't run out!)

While chicken is baking and nearly done, brown the pineapple slices in butter and a little brown sugar melted over them.  Place on top of chicken to serve.  Serve gravy over rice.  Several chicken bouillon  cubes may be added to rice for flavor and color.
